Zucchini Carrot Spice Bread


1 c. all purpose flour
1 c. oat flour (or oatmeal processed fine in processor)
1/2 c. whole wheat pastry flour
2 tsp ground cinnamon
1 1/2 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1/8 tsp fresh ground nutmeg
1/8 tsp ground cloves
2 egg whites
1/4 c. plain yogurt
1/2 c. water
2/3 c. brown sugar
2 Tbsp canola oil
1 tsp orange zest
1 tsp vanilla extract
1 c. zucchini, grated and drained
1 c. carrot, grated and drained
1/2 c. dried cranberries

Preheat oven to 375 degrees and prepare large loaf pan (9x5)-In large bowl, combine flours, cinnamon, baking powder, baking soda, salt, nutmeg and cloves and set aside.-In bowl of stand mixer, combine egg whites, yogurt, water, sugar, oil, zest, and vanilla.-Whisk on medium high speed until ingredients are fully combined and mixture is frothy, about 1 minute.-Make well in dry ingredients and slowly pour in wet ingredients. -Mix wet ingredients into dry until just combined.-Fold zucchini, carrot, and cranberries into batter.-Pour into prepared loaf pan and tap to remove extra air.-Place in oven and bake until cooked through and toothpick inserted into center of pan comes out clean, about 1 hour and 15 minutes.-Let cool in pan for 15 minutes.-Turn out onto wire rack to cool completely before slicing and serving.

Orange and lemon


cake3 cups (420g) all-purpose flour
1 ½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 tablespoons grated lemon zest
2 tablespoons grated orange zestjuice of 1 lemonjuice of 1 orange
¾ cup (180ml) milk (preferably whole)
1 cup (226g) unsalted butter, at room temperature
1 ½ cups (300g) granulated sugar
5 large eggs, at room temperature

icing sugar for dustingPreheat the oven to 175ºC/350ºF; butter and flour a round 25cm (10-in) cake pan or springform pan.Sift together the flour, baking powder, baking soda and salt. Once sifted, add the orange and lemon zests and mix well. Set aside.In the bowl of an electric stand mixer, using the paddle attachment on medium speed, combine the butter and sugar and mix for 2 to 3 minutes until the butter is light in color and appears fluffy.Combine the lemon juice, orange juice and milk and stir.Add the eggs to the butter/sugar mixture, one at a time, on medium speed, making sure to scrape down the sides of the bowl after each addition.Begin adding the dry ingredients, in three additions, and then alternating with the milk/juice mixture. You should begin with the dry ingredients and end with the dry ingredients.Pour the batter into the prepared pan and bake for 50 minutes to an hour. Check the cake after 50 minutes by inserting a toothpick or cake tester into the centre of the cake. If it comes out clean, it's done. If not, continue baking the cake. In my oven the cake took an hour so the baking time may vary based on your oven.Once done, remove the cake from the oven and set on a wire rack to cool completely. Once cool, unmold the cake and dust with icing sugar before serving.

Monte Verde




Os pioneiros de Monte Verde são Verner Grinberg (falecido em 2006 aos seus 96 anos) e sua esposa Emília e o sobrenome da família deu o nome à cidade: “grin”, verde, e “berg”, monte. A família Grinberg chegou ao Brasil em 1.913, da Letônia e foi morar em 1.921 na recém-fundada Colônia Varpa, próxima à cidade de Paraguaçu Paulista.
Lá, ao se casar com dona Emília, resolve passar sua lua de mel em Campos do Jordão, o jovem casal se empolga com o clima de montanha e com as paisagens da Serra da Mantiqueira. Em 1.936, ouviu falar dos Campos do Jaguari, município de Camanducaia hoje Monte Verde, lugar de clima e paisagens semelhantes a Campos do Jordão. Em 1.938, ali adquire terras e inicia a formação de uma fazenda. Com o passar do tempo, muitos de seus amigos começaram a sentir atração pelo lugar. E aos amigos e parentes, geralmente europeus e adeptos de sua religião, a batista, cedia terreno para que construíssem casas e viessem morar na fazenda. Hoje a famosa cidade Monte Verde.
